Greek Salad With A Twist & Dressing

Hello friends, welcome back to my blog. What have you all been up to ? As for me I have been up to a lot including perfecting my Greek salad recipe. I love Greek salad so much mainly because it super healthy, super colorful and I can eat all my favorite veggies in one bowl. I make the best Greek salad I have ever tasted (not bragging, just saying….) , and of course I cant keep the recipe to myself .Lets get to it

Note: (This is my own recipe, not the original Greek salad recipe)

For Salad

  • 1 head Lettuce, Chopped (not thinly)
  • 3whole Ripe Tomatoes, Cut Into Six Wedges Each, Then Each Wedge Cut In Half
  • 1 Cucumber, Peeled, Cut Into Fourths Lengthwise, And Diced Into Large Chunks
  • 1/2 whole Red Onion, Sliced Very Thin
  • 20 whole Olives, Cut In Half Lengthwise
  • Handful of Crumbled Feta Cheese
  • Fresh Parsley, Roughly Chopped (Optional)
  • Mint, Roughly chopped
  • 1 Red Bell pepper , sliced thinly (Optional)

For Dressing

  • 1/4 cup Olive Oil
  • 2 Tablespoons Red Wine Vinegar
  • 1 teaspoon Sugar (more To Taste)
  • 1 clove Garlic, Minced
  • 6 whole Olives, Chopped Fine
  • 1/4 teaspoon Salt
  • 1 teaspoon oregano
  • Freshly Ground Black Pepper
  • 1 whole Lemon, For Squeezing

Method: Add chopped lettuce, tomato wedges, cucumber chunks, onion slices, olives, bell pepper slices, half the feta, mint and  parsley to a large bowl.
For Dressing: Combine olive oil, vinegar, sugar, oregano, garlic, salt, pepper, and chopped olives in a bowl. Whisk together until combined. Taste and adjust seasonings (I almost always add a little sugar.)
Pour dressing over salad ingredients, then add salt and pepper. Toss with tongs or clean hands. Just before serving, top with additional feta and squeeze a little lemon juice over the top. You can eat rather like that, or with garlic bread.

Try out this recipe this week. Super healthy, super delicious
