Currently living a very healthy lifestyle on a budget and i am on my 4th day. For today, i made a 15 minutes kale sauce that can be eaten by itself, eaten with brown rice or bulgur wheat. I got all veggies from Oga Isa store at Utako Market Abuja.
- 1 bunch of Kale (washed, roughly diced)
- 5 Tomatoes (chopped)
- 1 chicken fillet (chopped)
- 1 sausage (chopped, optional)
- 1 teaspoon (Black Pepper)
- One cup of lemon grass water
- Salt,Seasoning, Cumin (To taste)
- Onions (Finely Chopped)
- Olive Oil (3 tablespoon)
Pour oil into pan and let it heat for 2 minutes, add onions and let it sweat for a while. Add salt, black pepper, and the lemon grass water. Cover pan and allow to cook for 5 minutes. Add tomatoes and rest of the spices to chicken mixture, stir until tomatoes becomes tender. Add basil and more black pepper. Add your sausage and already chopped kale. Cover pan for 1 minute (allow veggie steam). Remove cover and stir. Serve right away with brown rice, white rice or bulgur wheat.
