My Breakfast Roasted Potatoes/Veggies Recipe

Hey guys welcome back to my blog, i figured i have not posted any food recipe this year and i figured i let you guys in on one of my recipes that has now become famous in my household.

I love anything potato apart from boiled irish potatoes, i can’t even stand it. However when irish potatoes is roasted the right way + with veggies , it can be quickly become the best thing in your life. Lets get to the recipe shall we:


  • 10 medium size Irish potato
  • Salt to taste
  • Sage (1/2 teaspoon)
  • Basil (fresh/diced)
  • Parsley (handful/finely diced)
  • Olive Oil
  • Black pepper
  • A pinch of Turmeric powder
  • 2 Big firm Tomatoes
  • Carrots (2 sticks)
  • Broccoli & Beet Root (Optional)

Method: Wash potatoes and cut into smaller bites, wash veggies and also dice into smaller pieces. Rinse all veggies & potatoes, set aside. In a small bowl, add all spices and herbs and mix together, pour potatoes and veggies into the seasoning mix, lightly toss and add olive oil. Pour prepared potatoes and veggies into a baking tray, arrange accordingly and add more black pepper. Bake for 40mins

Once it is ready, take out of oven and serve hot. Can be eaten with eggs or sauce.
