Hey Friends,welcome back to my blog. It been long since I had a food post,so I thought I should share my dinner and recipe with you guys today .
Sweet potato is one my best vegetable and it is super healthy too. I can eat it everyday (I love it baked and boiled in soups or made as porridge). If you are on a weight loss journey and you looking for a great snack,baked sweet potato is everything (Will post recipe soon).
This sweet potato soup is also great for the cold/winter season.
Let’s get right to it
-2 medium sized sweet potato (Peeled,diced and washed)
-1 small chicken fillet (Diced and washed)
-Bell pepper (any colour of your choice,washed and diced)
-Handful of diced onions
-2 big tomatoes (washed and diced)
-3 teaspoons of black pepper (A lil more for garnish)
-1/2 teaspoon of grated ginger
-2 cups of water
-1 cube of Seasoning
-Salt to taste
Direction: Put washed sweet potato and chicken in a pot with 2 cups of water. Add salt and the seasoning and onions,let it cook for 7 mins. Add the black pepper,diced bell pepper and ginger,let it simmer for 1 minute . Then add diced tomatoes,use a cooking spoon to stir and bring everything together. Bring down from fire and serve . Sprinkle black pepper and garnish with parsley. Enjoy your soup.
