Rice,Veggies,Pan-Fry Fish Fillet

Last night I made one of my favorite dish! Rice, veggies and fish!

It was absolutely delicious,super quick and easy to make. Let’s get right to the recipe

Ingredients (Serves 2)

1 cup Basmati rice

2 Handful of Spinach (washed and sliced)

4 chestnuts mushroom

3 Tomatoes

Bell Pepper (Use half of each colour)

1 Knob of Ginger

Spring Onions

Seasoning  (Black pepper,garlic powder)


Salt to taste

Extra Virgin Olive Oil

1 Clean white fish fillet

Method: Put washed rice in a pot of boiling water (2 cups of water). Parboil for about 5minutes,rinse again to get rid of the starch, return to fire,add one cup of water,salt and half teaspoon of extravirgin olive oil. When the water in the rice has dried up,remove from fire.

Spice your fish fillet with salt,black pepper and garlic powder. Put pan on the fire and add 1 tablespoon of extra virgin olive oil. Gently put your fish fillet into the hot pan,and let it cook for 3min on each side (cook with reduced heat). when fish is ready,let it rest in pan.

Wash all your vegetables,slice bell pepper,tomatoes,onions,mushrooms,spinach. Grate ginger. Put pan on the fire,add 3 tablespoon of extra virgin olive oil.Put ginger and spring onions into pan,add bell pepper and mushroom. Continue to stir,add salt and all other seasoning. Add tomatoes and let it cook for 2 minutes. Add washed and sliced spinach into the mixture,cover the pan for 3minutes and let everything cook and come together. Bring down from fire and serve.
