Hey Friends,as we all know this month of March is all about celebrating women,this weekend is how ever a very special one for all Mothers as March 6th is Mothers Day!
My mum is very special to me,she is my world! That is why to kick start this Mother’s Day weekend! I made a delicious and healthy breakfast for her! I call it the Savory vegetable bread cassarole.
She loved it so much,she kept asking for more. Let’s get straight to the recipe
-3 cup wheat bread (tear whole bread or any kind of bread into small pieces,preferable stale bread)
-2 cups full cream or evaporated milk
-1 cup Almond milk
-1 cup cheddar cheese (Grated)
-3 table spoon of cream cheese
-2 cups of sliced oyster mushrooms
-Spring onions (A bunch,diced)
-1 small green shallot
-Bell pepper (A cup of mixed bell pepper,diced)
-Salt to taste
-1 cup minced meat
Method: Put torn bread in a bowl and add salt and black pepper, and half cup of grated cheddar cheese set aside. In another bowl,break eggs and whisk,add almond milk and full cream,add a little salt and continue whisking. Add all vegetables to the egg milk mixture (leave out one cup of mushroom). Add the egg-milk-vegetable mixture to the bread mix and stir with a fork,don’t over mix. Set aside. Butter your cassarole dish or baking pan and put in half of the mixture,spread evenly,sprinkle cheddar cheese,pour in the remaining mix and sprinkle the remaining cheese,also sprinkle the remaining mushroom. Add cream cheese with a spoon. When everything has been added cover dish/pan with a foil and put in the fridge for 3 hours, I will advice you leave it in the fridge over night.
To Bake: Bring it out of fridge and remove foil for 10minutes. Cover back with foil and bake for 40minutes. Remove foil and bake for another 10 minutes.
Remove from oven and allow to cool for 5 minutes,serve and enjoy.
