Seafood Pasta

img_8249I love pasta same way Oprah loves bread, I LOVE PASTAAAAA!! I know I should not be having pasta as I am on a strict diet, but I could not help myself last weekend. I made my best pasta dish yet, I feel like I get better and more innovative everyday (Aint bragging) okay maybe a little. I made seafood pasta and it was so delicious!! Lets get right to my pasta recipe.

  • 400g Spaghetti (or any other kind of long pasta, I used fettucine)
  •  2 Tablespoon Olive oil
  • 3/4 Cup White wine
  • 1 Teaspoon brown sugar
  • 300g Seafood mix
  • 1 Cup chopped tomatoes
  • 1/2 Cup chopped Basil
  • 1 Clove of garlic (grated)
  • 1 Small onion (chopped)
  • 3 Tablespoon tomato puree
  • Salt to taste
  • 1 Stock cube
  • 1/2 cup of water

Method: Cook spaghetti according to the instruction on the packet. Heat the oil in a wok or large frying pan, then cook the onion and garlic over a medium heat for 5 mins until soft. Add the tomatoes, tomato puree and white wine, let it simmer for 2 minutes, add your brown sugar, a stock cube and half cup of water. Turn down the heat, add your seafood and stir. Let it cook for 7 minutes, add your basil and continue stirring. Stir in your cooked pasta and cook for another 5 minutes, keep stirring occasionally to stop the pasta from sticking. Season with salt to taste. Serve immediately.

Make sure you try out this recipe this weekend.
