Sweet potato is by far one of my favorite carb, I love the fact that I can make anything out of it. Today I made a simple and easy spiced herb sweet potato wedges. It was so good and so filling, it was a super healthy meal too, as it was baked and not fried.
This meal is great for lunch, dinner or as a snack and it can be eaten with a sauce or dip. I just ate mine like that with a cup of green tea.
3 Medium sweet potatoes, peeled, washed and cut into wedges
3 table spoon olive oil
Salt to taste
Pinch of garlic powder
Scallion chives (Diced)
Directions: Mix all other ingredients with the potato,put on a greased baking tray,add a little olive oil and bake for 30 minutes!
When ready it should be crisp on the outside and soft inside. Enjoy your potato with dip,sauce etc. I had mine with a glass of iced green tea (Jasmine flavour)
