Plantain and Egg Muffins


Hey guys welcome back to my blog.

I want to share the recipe of egg and plantain muffins. I had this delicious meal for breakfast,with some veggies. Honestly this is one is my best breakfast meal yet,it was super easy to make and also super healthy.

So if you like the tradional fried plantain and eggs,you’re going to love this recipe!


Okay let us get to it.

Ingredient (Makes 4 Muffins)

-2 ripe plantain

-2 eggs

-3 tomatoes

-2 baby carrots

-Raddish (you can also use any other vegetable you like spring onions,bell pepper etc)

-Dill (I personally will add dill to anything)

-Salt to taste


-Black pepper (Or you can use fresh pepper)

-Oil (For frying the plantain and greasing the muffin pan)


imageCut plantain into cubes and fry. Remove the fried plantain from the pan,put in a strainer and set aside to cool. Crack your eggs into a bowl,add your vegetables,add seasoning/spices,add salt to taste. Grease your muffin pan. Using a spoon put the egg mixture into the greased pan.

Then top each of the egg mixture with the fried plantain. Bake for 10 minutes or until when the muffins are set. Set your oven at 180 degrees.

When it is ready,gently bring it out of the  oven and let it cool in the pan for like 5 minutes. Then gently remove it from the pan.

Enjoy your muffins with any side of your choice.
